One of my Favourite Vegetables!

Karela ki sabzi is a popular Indian dish made from bitter gourd (also known as bitter melon). Here’s a simple recipe:

Ingredients:

3-4 medium-sized bitter gourds 2 tablespoons oil 1 teaspoon cumin seeds 2 large-sized onions, chopped 1-2 green chilies, chopped 4 pieces of dried mango 1/2 teaspoon turmeric powder 1 teaspoon coriander powder 1/2 teaspoon red chili powder Salt, to taste Instructions:

Wash the bitter gourds thoroughly and slice them lengthwise. Remove the seeds and inner pulp using a spoon. Heat oil in a pan and add cumin seeds. Once they start to splutter, add chopped onions and green chilies. Sauté until onions turn golden brown. Add dried mango pulp. Sauté for a minute. Add sliced bitter gourds and mix well. Add turmeric powder, coriander powder, red chili powder, and salt. Mix everything well. Cover the pan and let it cook on low flame for about 15-20 minutes or until the bitter gourds are cooked through. Serve hot with roti or rice. Enjoy your karela ki sabzi!

PS: The dried mango is used to balance out the bitterness of gourds. Can use dried mango powder as well.
